Also known as San Mai in Japan, a sandwich steel is the superposition of at least three layers of metal. In the centre, a high hardness steel and on both sides, a more resilient grade to allow your knife blade to take advantage of each other's properties.
This carbon sandwich steel consists of a 90MV8 (O2) carbon steel core with a hardness of 58 to 63 HRC after hardening caught between two layers of more malleable and resilient XC10 steel. This steel can be used in the manufacture of all types of blades.
