X50CrMov steel has ideal properties for the manufacture of kitchen knives

This type is the most used in cutlery in Germany, where it is also most often manufactured. So much so that 1.4116 steel is very often called "German steel". X50CrMov15 is used by all large manufacturers of kitchen knives and professionals: Wusthof, Zwilling, Güde but also in the rest of the world (France, Spain, Asia)
In France, it is called Z50 routinely but it differs somewhat from Z40 having two main elements: Molybdenum and Vanadium.

Molybdenum and Vanadium properties:

Molybdenum is a powerful carbide generator that also has the property of increasing corrosion resistance. That is why it is often used in high-alloy Cr steels. Vanadium is also a carbide generator that will increase the resistance to wear and tear. It also increases the resistance to tempering and will allow to refine the grain during the thermal processing. On the other hand, it is an air quenching inhibitor, to succeed in increasing the hardness, the cooling rate will be even more critical than for X46cr13 which does not have vanadium.
By its composition, the X50CrMoV15 has better abilities than 1.4034 that is also used very widely. More resistant to wear and tear and corrosion, it is a good choice for kitchen knife manufacturers.
